How to prepare Sake for bottling!

We are getting close to the end of the Saké Series, this week we go over the various steps for the Yodan phase. The Yodan (~day 27) is the process of preparing the Saké for conditioning and bottling. The Yodan phase can start at the brewer's convivence, some brewers will let the Saké ferment to .987 rather than the gravity we used of 1.001. The steps covered in this video are mash pressing, pasteurization, and clarifying. Make sure when pasteurizing to heat the liquid evenly, and let the glass cool before cold bathing it.
